Choosing the Right Size – 20cm, 23cm, or 26cm?
The Mastercook traditional aluminium karai is available in three sizes:
- 20cm – Most compact size. Ideal for 1–2 people, smaller households, and everyday frying tasks. Uses less oil and heats up fastest.
- 23cm – Versatile everyday family size. Ideal for 2–3 people and everyday family cooking tasks.
- 26cm (this kadai) – Large family size. The right choice for batch frying, cooking for 4–6 people, and celebration cooking. More cooking surface means more samosas and pakoras per batch.
Why Traditional Aluminium?
The traditional aluminium kadai has been used in South Asian cooking for generations. Aluminium is one of the best heat conductors available in cookware, heating up quickly and distributing heat evenly across the base and curved sides of the kadai. Unlike non-stick coatings, bare aluminium has no coating to wear off or damage — it simply gets better with use as it develops a natural seasoning over time. Many experienced South Asian cooks prefer the traditional aluminium kadai precisely because of its durability, heat performance, and authenticity.
Hob Compatibility
- ✅ Gas hob
- ✅ Electric hob
- ✅ Ceramic hob
- ❌ Not suitable for induction hobs (aluminium is not magnetic)
Care Instructions
- Hand wash recommended
- Wash with warm soapy water and a soft cloth or sponge
- A mild scourer can be used on bare aluminium – there is no coating to protect
- Dry thoroughly after washing to prevent water marks
- Do not leave acidic foods (such as tomato-based dishes) sitting in the kadai for extended periods
- The aluminium will naturally darken with use – this is normal and does not affect performance
